Dairy Free "Nice Cream"

Dairy free "nice cream" is an easy dessert or afternoon snack.

Ingredients

  • 2-3 overripe frozen bananas
  • Optional additions: unsweetened almond milk, if you’d like a thinner “nice cream”, 1 tsp of vanilla extract, add in Greek yogurt for protein addition, cocoa powder for chocolate “nice cream”, add in frozen strawberries or peaches for strawberry or peach “nice cream”
  • Toppings: berries, dark chocolate chips, sprinkle of cinnamon or cardamom or pumpkin pie spice

    Instructions:

    1. Peel and cut ripe bananas into large pieces, then freeze in an airtight bag or container. (You can freeze a whole bunch at once so they are ready whenever you want to make banana ice cream.)
    2. To make the ice cream, throw around 2-3 frozen bananas into a blender, food processor.
    3. Optional step: add 2-4 TBSP of milk of choice for smoother blending if desired—and blend until you achieve a soft-serve texture.
    4. You can serve immediately add favorite toppings like raw nuts, dark chocolate chips, or shredded, unsweetened coconut.
