Chia Seed Pudding

Make this pudding in 5 minutes. Great for breakfast or a snack.


  • 2 cups of unsweetened soy or almond milk with added protein
  • 1/2 cup of chia seeds
  • 2 teaspoons of vanilla extract
  • 1/2 teaspoon of orange extract or almond extract (optional)
  • 1/4 cup of maple syrup or date syrup
  • 2 teaspoons of cinnamon, cardamom, or pumpkin pie spice (optional)
  • Optional Toppings: sliced almonds, fresh berries, a few dark chocolate chips


  1. Blend all ingredients except for the chia seeds in the blender until smooth.
  2. Whisk the chia seeds into the blended ingredients.
  3. Pour the mixture into a jar or individual glass containers, cover and place in the refrigerator overnight to let gel.
  4. Add toppings and enjoy!
