Sweet Potato Hash
Add savory herbs like thyme sand sage for added flavor or add some eggs.
Ingredients
- 2 tsp avocado oil
- ½ onion, thinly sliced
- 1 c sliced mushrooms
- 1 clove crushed garlic
- 2 large sweet potatoes, cooked and cut into ½ cubes
- 1 c finely chopped Swiss chard
- ½ c vegetable broth
- 1 tsp salt
Instructions
- In a large skillet over high heat, add avocado oil, onion, mushrooms, and garlic. Sauté for about 8 minutes or until the onions are tender.
- Add the sweet potatoes, Swiss chard, and vegetable broth. Cook for 5 minutes. Add in the salt.
15 minutes prep time. 15 minutes cook time.
