Grilled Caprese 

Zucchini Roll-ups

Ingredients

  • 3 medium zucchini, sliced into strips
  • 24 baby mozzarella balls
  • 12 cherry tomatoes, halved
  • 24 fresh basil leaves
  • 1 small red onion, thinly sliced (optional)
  • 2 tablespoons of olive oil
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper

Instructions

  1. Pre-heat grill to medium-high, about 400 degrees F (temperature will vary). 
  2. Place one basil leaf, mozzarella ball, cherry tomato half, onion slice on a zucchini strip.
  3. Roll as tightly as you can, and secure with a toothpick.
  4. Repeat with remaining ingredients.
  5. Brush roll-up with olive oil and sprinkle with salt and pepper.
  6. Grill for 1-2 minutes per side, until the zucchini is lightly charred and the cheese is soft but not melting. 
  7. Serve immediately.

Note:

  • Mozzarella balls come in several sizes. Regular mozzarella balls are about the size of a small orange. You can cut and divide the cheese or use ciliegine, also known as baby mozzarella balls, about the size of a cherry tomato.
  • No grill? These roll-ups are delicious cold or hot. Try them cold with a drizzle of balsamic glaze. You can make your own balsamic glaze or find it in the vinegar section of the grocery store. It will add more flavor to salads, veggies, and more. 
  • Making zucchini strips: Clean and trim the ends of the zucchini. Use a vegetable peeler to carefully slice the vegetable lengthways into long, thin ribbons.
